Sherry Pepper sauce originated in Bermuda. Although Bermuda is practically
our neighbor - just a couple of hundred miles off the coast- here at Island Winery in Hilton Head South Carolina, we decided to adapt the recipe to our Low Country cuisine. We started with barrel aged semi-dry sherry. Then we infused the sherry with smoky chipotle peppers and habenero peppers for several weeks to give it an extra kick
Finally we bottled it with a couple of pequin peppers to keep true to the original. And just to give it that special spice which Low Country cooking is famous for, we added some of the same Caribbean spices that were once traded in the ports of Charleston and Savannah centuries ago.
